| Sweet Cheese and Fruit Empanadas, Fresh Berries and Kahlua Caramel |

• 6 Flour tortilla shells
• 8 oz. Mascarpone cheese
• 2 cups 10x ultrafine or superfine sugar
• 1 oz. Vanilla
• ½ pint Blackberries
• ½ pint Strawberries
• ½ lb. Brown Sugar
• 1 cup Butter
• 2 tbsp. Cinnamon
• 2 tbsp. Fresh mint
- Mix cheese, 1 cup of the 10x sugar, chopped berries and chopped mint.
- Wrap 3 oz of filling in flour tortilla and fry till crisp.
- In a sauce pan melt butter.
- Add cinnamon, brown sugar and vanilla cook until it becomes syrupy.
