| Fresh Tomato Salsa |

• 3 cups freshly diced tomatoes (Silent Oaks Farm)
• ½ cup diced red onion (Eilerman Orchards)
• 1 cup diced green pepper (Biver Farm)
• 1 clove minced garlic
• 3 tbsp finely chopped jalapeno
• 1 tbsp fresh cilantro
• ½ cup sweet corn
• 2 tbsp lime juice
• 1 tsp salt
• Tortilla Chips
- Wash and dice all vegetables and cilantro. Combine all ingredients in a large bowl.
- Mix well. Can be served right away but benefits from chilling for an hour.
- Serves 8
